Chicken, Apple, Kale, and Potato Sauté

Say that 10 times fast! I re-named this recipe over and over, I promise I tried to shorten the name. In conclusion, I decided on an obnoxiously long name because frankly I am leaving out a main contender if I drop any of the ingredients. As I’m righting this I realized the red onion isn’t in the title, well you can’t win em all!
My apologies, please shoot me a message if you come up with a better name to this recipe, which I’m sure won’t be hard to do. Maybe I’ll chug another cold brew and go back to the drawing board. I promise my apple,kale, chicken, potato, (RED ONION), sauté won’t let you down, like this pointless paragraph! In all seriousness this is the BOMB, it’s one of the most requested food prep recipes from my cousin Brandon. Hope you enjoy it!
Ingredients:
*I always try to buy all organic
  • 3 lb chicken tenderloins
  • 1 head kale roughly chopped
  • 1 red onion thinly sliced
  • 1 lb fingerling yellow potatoes cubed
  • 3 Fuji apples cubed
  • 2TB ghee
  • Salt and Pepper
  • Sauce:
  • 2TB horseradish mustard
  • 2TB avocado mayo
  • 2TB honey
  • 2TB lemon juice
Directions:
  1. Mix sauce ingredients and set aside
  2. In a large skillet heat one TB of ghee over medium/high heat
  3. salt and pepper chicken tenders and cook until crispy on each side (about 5 minutes per side)
  4. Set chicken aside
  5. In same skillet add 1TB ghee, chopped potatoes, and sliced red onion. Cook about 10 minutes until potatoes are crisp
  6. Add cubed apples to potatoes and onion and cook for an additional 2 minutes
  7. Remove pan from heat and mix in chopped kale and sauce. Stir well
  8. Serve with Chicken tenders on top and enjoy
