Chicken Club
Wahoo it’s Brunch Sunday, fire up the barbie and flip to football! Today we had family over and made “build your own” chicken club sandwiches. Chicken clubs are always a favorite, when you make it “build your own” every person can make it exactly how they want it; bun, no bun, cheese no cheese, etc. I made mine into a protein style club with fresh berries on the side. Now it’s time to be lazy so I can morph into a productive member of society tomorrow.
Ingredients:
Organic romaine lettuce
Organic sliced tomato
Thin sliced red onion
Sliced avocado
Chicken breast
Havarti cheese (optional)
Avocado mayo
Bacon
S&P
GF buns (optional)
Directions:
- Fully cook bacon (2 slices) per sandwich
- Pound chicken breasts , S&P both sides, grill, and add cheese (optional)
- Layer lettuce, chicken breast, mayo, bacon, tomato, avocado, and red onion
