Grilled Portobello Mushroom Turkey Burger

What do you mean summer is over?! Here in Arizona it is just starting to cool down enough you can actually lay out, so we are firing up the grills and having pool days! Today I made my “go-to” turkey burgers but instead of wrapping them with the usual, lettuce, I grilled 2 giant portobello mushrooms for the “buns”. To make this amazing burger even better I added guacamole, grilled onions, tomato, and butter head lettuce… Voila! Done and done! I’m sorry if it’s already getting cold where you’re at, we tried that for 4 years, and just weren’t about that life! You can still make these amazing burgers, just cannon ball into a Jacuzzi instead 😉

Turkey Burger ingredients (makes 7-8  patties):

  • 3lb spicy Italian ground turkey
  • 2 eggs
  • 1/2 cup GF Italian bread crumbs
  • 3 minced (green & yellow) squash
  • 1 small minced sweet onion
  • 10-12 minced mushrooms
  • 1t salt
  • 1t pepper
  • 1t garlic powder
  • 2 TB coconut milk (from can)

Toppings (for one burger):

  • 2 giant portobello mushrooms (used as buns)
  • 2TB guacamole
  • 2 thick slices of onions
  • 2 leafs butter lettuce
  • 2 slices of tomato

Directions:

1.Heat grill med/high

2.Mix ingredients for turkey burgers and form patties

3.Coat onion rings and portobello mushrooms (buns) with avocado oil

4.Grill portobello mushroom and onions for about 4 minutes on each side

5.Grill turkey burgers for 15 minutes on each side

6.Place your turkey burger in between your two portobello mushroom “buns” and add your toppings
