Spicy Pineapple Guacamole

 

Today I ventured out to explore an authentic Mexican market and found some awesome stuff to cook for you! Between the homemade fresh corn tortillas, the avocados the size of my head, and the marinaded carne asada; my cart filled up quickly. Going to Costco and Sprouts can only provide so much inspiration, so I love stepping out of my weekly routine. I’m not sure why I have waited this long to put fresh cut pineapple in guac… so good! I served the guac with baked plantain chips that I butchered a few times before finally getting them right! Now if only I had a marg… disfruta!

Guacamole:

2 extra large avocados (or 4 small)

1/4 bunch chopped cilantro

1/2 chopped red onion

1/2 minced jalapeno

3 key limes

2 cloves minced garlic

1/2 cup fresh pineapple

course sea salt (to taste)

Plantain Chips:

3-4 plantains

*the greener the better

1. Preheat oven to 400 degrees

2.Slice plantains very thin with a Mandolin (or knife)

3.Toss plantains in 2TB of coconut oil and add your desired spices (I just did sea salt)

4.Line a pan with parchment paper and place plantains in a single layer

5.Bake for 20 minutes
