Stupid Easy Chicken Piccata

Ever have those weeks where you are just flat out lazy and have zero motivation. I mean you get your workouts in and do your job, but anything beyond that is asking too much? Ya me either ?. Just kidding this has totally been me, going on a week now. Any day I’m hoping to snap out of it, but it’s not looking good. This is when I turn to my quick 15 -20 minute recipes because let’s be honest the couch is calling my name! This stupid easy (lazy) chicken piccata has minimal ingredients, it’s amazing! Best part is you can get back to your Netflix in 15 minutes!
Ingredients: 
  • 1/4 cupGF flour
  • 4 chicken breasts
  • 2 lemons (juiced)
  • 2TB ghee
  • 3/4 cup chicken stock
  • 2 heaping TB capers
  • 1/4 bunch roughly chopped parsley
  • S&P to taste
Directions:
  • Rinse and pound chicken breasts flat until about 1 inch thick
  • In a large zip lock bag add flour and S&P shake well
  • Add chicken breasts, shake until fully coated
  • In a large skillet heat ghee over medium high heat, once hot add chicken breasts
  • Cook for about 5 minutes on each side, chicken should be a crispy golden brown color
  • Remove chicken lower heat to low and deglaze pan by adding chicken stock and lemon juice
  • Stir until all the glorious chicken bits are Removed from pan
  • Slowly poor sauce over chicken, add capers and parsley and serve
  • *pairs well with asparagus or over a bed of quinoa noodles
