Christmas Spiced Pecans

Six more days ’till Christmas ? Eve, but whose counting anyway?! I’m so excited to: stay up late, have every tournament known to man kind with my cousins (spike ball, ping pong, cornhole), and even a few ??with lots of laughs! It’s cool how your perspective changes as you get older, it’s no longer about the gifts ?, instead it’s all about making new memories with the people you love.

Ok, I’m done with the whole speaking from the heart ❤️ thing, I know that was allot. This year I was all about starting my Christmas shopping early, and by early I mean like 114 degree weather in mid June… But I still had a few last treats I wanted to make for the family. I didn’t want to go the cookie route, for the sake of me eating half of the dough, so I racked my brain and came up with holiday spiced pecans! This seriously makes the cutest holiday gift in a mason jar with an oversized plaid bow #allplaideverything. Instead of the typical maple ? syrup, I used vanilla coconut sugar. Home run ⚾️!

Ingredients: 

  • 1/3cup vanilla coconut sugar
  • 1 egg (discard yolk)
  • 1/4t nutmeg
  • 1/4t all spice
  • 1/4t ground ginger
  • 1/4t cinnamon
  • 1/4t ground cloves
  • 1/4t cumin

Directions:

  1. Preheat oven to 300 degrees
  2. Add your pecans to a bowl and mix well using only the whites of the egg
  3. In a plastic ziplock mix all your spices together
  4. Add pecans to zip lock and shake bag
  5. Spread in a single layer on a greased cookie sheet
  6. Bake at 300 degrees for 40 minutes
